Espresso Terrors: 2 Grinder Anxiety
Просмотров 7 тыс.28 дней назад
People fret about coffee grinders. And while it's true that different burrs and grinding speeds and feed rates and other factors can yield subtle differences on the palate, it's easy to worry too much. I'll try to de-fang the goblins that seem to cause the most anxiety. Then I'll push the cafe-industry grinder regulations to the limit, hoping to get arrested. Donate to the UNICEF Palestine Emer...

The Lelit Bianca v3 has been on the market for a few years now and remains a strong contender. This is a review comparing it to the Profitec Pro 600. Hello, highly respect your advice on anything coffee, and as I’m finding difficult to purchase the Klüberpaste UH1 84-201 in sydney, (via an Australian website), I was wondering if the following food grade grease would also be suitable for use in place of the Kluber lubricant? It’s called INOX MX6. Here’s the sellers Amazon description of it: … ”INOX MX6 is a synthetic PAO base extreme pressure grease which uses an organo clay thickener formulated to give premium performance and food grade purity. This grease is made entirely of ingredients which meet the requirements of section 178.3570 of the US FDA regulations and have been cleared for use within registered establishments by the US Department of Agriculture and will not deleteriously affect any food products.”

You might be surprised how sensitive I am to eternal European Christian supremacy and its role in post-war anti-Semitism and the "polite" expulsion of Holocaust survivors. Which is why you're in Palestine, rather than the heart of Europe, influencing its development. Doesn't make what Israel is doing right, but I do understand a fair bit of it.

    I hate this video. After this video came out, my coffee increases to fill the portafilter from 9-10 grams to 14-15 grams, there was negative enhancement in taste with a HUGE increase in channeling..the taste went bad so much that i was contemplating giving up coffee. I use flair classic with df64 grinder. Today i found my old acupuncture needles and did proper wdt even at 10 grams and the channeling was very less, there was a better taste of the shot. Please dont peddle half truths

      My fault! The Flair is mechanically different from E61 and E61-compatible ring and saturated groups. This video does not apply to your device or the Robot or the 9Barista, and I should have mentioned that in the vid. I'm only one guy: researcher, script writer, cameraman, and video editor. I don't have a team like some, so occasional oversights are inevitable. However, in its context, the video is quite sound, and the 'dose by volume' video is also sound, just not in your case. Sorry about that.

    After a lot of research finally bought a Mignon Zero grinder, it's a amazing piece of art. However I've been struggling with the very little amount of information about the different settings in the dialing knob. I couldn't find so far any microns per mark chart (from zero point) for example. In some cases I saw information about the 3 full turns in the dial (from zero point) being the total range of settings from turkish to french press (0 to 1400 microns), and some others that mentions that is only 1.5 full turns for the full range (again, 0 to 1400 microns). So, pretty confused right now, is there any piece of information about this? Is the full range for the Mignon Zero 3 full turns to the dial knob?

    I bought one a couple of months ago, and they have definitely addressed most issues. Mine is quiet, fast and provides a consistent grind. I removed the de-clumper as I quite enjoy a little bit of "puck prep" and it's pointless. I haven't checked the burr alignment. I'll be honest, I bought the thing because of the design as I think the Niche Zero has that "Blobject" design from the early 00's. Even at my advanced years I think it's old-fashioned-looking. Whereas this Eureka is a design classic.

    I have been trying this on the Cafelat Robot with the robot paper filters. I have not yet been able to make a "good" shot with the bottom paper but still I am curious. I believe that the "correct" compensation for the faster run-time would be to keep the grind size but lower the pressure to get the same contact time. It would be very interesting to see a new follow-up from the wired gourmet with this approach!

    I just looked at the Wikipedia article about the moka pot aaand... their x-ray video of the traditional unattended/continuous-heat process seems to contradict your assumptions about what happens to the puck once the water starts filling the middle of the brewer. From what I can tell they did fill the "basket" section by volume, but when the pressurized water comes in, it doesn't make the coffee swell up and press against the "basket" in every direction and thus form a compact well-shaped puck, but rather it gets compressed up against the top filter and leaves some free space below. With that free space allowing the puck to be sculpted arbitrarily, I think channeling is still likely. What I would change to fix that is I would add a paper (or better yet metal) filter _below_ the ground coffee, so that as the water pushes that filter up, it in turn presses uniformly on the coffee and really reliably keeps the puck well-shaped and the flow properly spread out during the whole process. This is inspired by your Aeropress espresso method but inverted. :D Bonus: this might also allow the use of a larger model of moka pot to brew smaller quantities of coffee by just filling the coffee basket to half or a quarter or whatever, which normally is recommended against by every source I've seen, as everyone thinks channeling and a watery brew are guaranteed anytime you under-fill. Well... not if the basket size is variable via its (new) bottom piece being movable by the water pressure. :) Or so I'm assuming based on physics/intuition. I'll be testing it tomorrow morning.

    • @wiredgourmet
      @wiredgourmet 21 день назад

      You might like followup to this video, Moka Pot Perfection, where I experimented with paper filters both above and below the coffee.

    • @d0nj03
      @d0nj03 20 дней назад

      @@wiredgourmet Oh right. I saw the word "voodoo" and I thought this was that second video, but actually both titles mention voodoo. :) Welp, in any case, what I got so far with paper above + paper below has been early channeling and an unsatisfactory brew, in the context of using a full dose of coffee, no partial filling, and with unbleached paper filters that I suspect are denser than Aeropress ones (brewing is definitely happening at higher pressure, as suggested by the much delayed start). I will have to try a coarser grind next, since I don't really have good control over the heat from induction to ensure a constant slow-as-possible flow (can't play around with lifting and re-seating the pot, all I can do is press the on/off button). Meanwhile I'll be looking to order a metal filter to use below the coffee to ensure better equalization of the flow of water than with paper, since paper can be bent by the stronger flow at the center.

    • @d0nj03
      @d0nj03 17 дней назад

      Success! What I needed was a coarser grind, better care when toying with the heater's on/off button to ensure constantly slow flow and to immediately stop adding heat when the stream starts getting very foamy (zero watery flow at the end seems to be the ideal for my taste), aaand it turns out my thicker unbleached paper filters were altering the taste of the coffee, so I replaced the top paper with a lighter one (cut to size from a standard cone-shaped one they sell for drip coffee) but kept the thicker version as a bottom "piston" filter to better distribute the pressure coming up against the coffee puck. Superb tasty coffee and a perfect puck discovered in the cleaning phase - by tapping the basket horizontally on each side a few times I could get a perfectly aggregated puck to fall in my palm, fully saturated, no channels, no dryness, flat surfaces on top _and_ bottom. I've never seen such a well shaped and easy to clean puck of coffee out of a moka pot before.

  • @bigglyguy8429
    @bigglyguy8429 22 дня назад

    Well i have to try something. Watched a vid on cleaning, took mine apart and cleaned it, now it's terrible. Can hear the burrs touching but the grind is far too coarse. Basically it's ruined, so I hope this will fix it. I did not remove the upper burr from it's carrier, just took the top bit off and got the bottom burr off (eventually) and no, I didn't know to mark anything. Since I didn't take the top burr off, I guess I need to shim underneath the bottom burr? Or just try rotating it across all 3 screws and hope it lines up again? Edit: So today I took it apart again and simply rotated the lower burr, . Then the machine jammed up and wouldn't turn? Motor got hot. Weird. Let it cool down and tried rotating one more postion, and now it works. Did the magic market test and pretty even. Now back to making proper coffee, but I'm still unsure about the main motor. Why did it overheat and jam?
